01 - Preheat oven to 400°F. Line a baking sheet with parchment paper to prevent sticking.
02 - Place carrots in a large bowl. Add olive oil, honey, thyme, salt, and pepper. Toss vigorously until all pieces are evenly coated.
03 - Spread the seasoned carrots in a single layer on the prepared baking sheet. Ensure they are not overcrowded to allow proper caramelization.
04 - Roast for 25 to 30 minutes. Turn the carrots once halfway through the cooking time. Cook until tender and the edges are golden brown and caramelized.
