01 - 3.3 lbs frozen or fresh potato fries
02 - 2 tablespoons vegetable oil
03 - 1 teaspoon salt

→ Hearty Halal Chili

04 - 1.1 lbs halal ground beef
05 - 1 medium onion, finely chopped
06 - 2 garlic cloves, minced
07 - 1 red bell pepper, diced
08 - 14 oz canned crushed tomatoes
09 - 1 tablespoon tomato paste
10 - 14 oz canned kidney beans, drained and rinsed
11 - 2 teaspoons chili powder
12 - 1 teaspoon ground cumin
13 - 1 teaspoon smoked paprika
14 - ½ teaspoon ground black pepper
15 - 1 teaspoon salt
16 - ½ teaspoon cayenne pepper
17 - 2 tablespoons olive oil

→ Cheese Topping and Garnish

18 - 9 oz shredded halal cheddar cheese
19 - 3.5 oz shredded mozzarella cheese
20 - 2 spring onions, sliced
21 - 2 tablespoons fresh coriander or parsley, chopped

# Directions:

01 - Preheat the oven to 425°F. Toss the fries with vegetable oil and salt until evenly coated. Spread them in a single layer on a baking sheet and bake for 25 to 30 minutes, turning halfway through cooking, until golden and crispy.
02 - While the fries bake, heat olive oil in a large skillet over medium heat. Add the chopped onions and sauté for 3 minutes until translucent and fragrant.
03 - Stir in the minced garlic and diced red bell pepper. Cook for another 2 minutes until the pepper begins to soften and the garlic becomes aromatic.
04 - Add the halal ground beef to the skillet. Cook while breaking up the meat with a wooden spoon, stirring frequently for 6 to 8 minutes until thoroughly browned and no longer pink.
05 - Sprinkle in the chili powder, ground cumin, smoked paprika, black pepper, salt, and cayenne pepper. Stir continuously to coat the beef and vegetables evenly with the spice blend.
06 - Mix in the tomato paste, crushed tomatoes, and drained kidney beans. Reduce heat to maintain a gentle simmer and cook uncovered for 20 to 25 minutes, stirring occasionally, until the chili thickens nicely. Taste and adjust seasoning if necessary.
07 - Transfer the baked fries to a large ovenproof serving dish. Spoon the hot chili evenly over the fries, then sprinkle the shredded cheddar and mozzarella cheeses generously across the top.
08 - Return the assembled dish to the oven and bake for 5 to 8 minutes, or until the cheese is fully melted, bubbly, and beginning to turn golden in spots.
09 - Remove from the oven and scatter sliced spring onions and fresh chopped coriander or parsley over the top. Serve immediately while hot and crispy.

# Expert Tips:

01 -
  • This is the kind of food that makes people forget they were supposed to be watching the game
  • The halal beef chili reheats beautifully, so you can make it ahead and focus on perfect fry crispiness when guests arrive
02 -
  • Soggy fries are the enemy, so never layer the cheese and chili until you are ready to serve
  • The chili needs to be thick enough to sit on top of fries, not slide right off into a sad puddle
03 -
  • Line your baking sheet with parchment paper for easy cleanup and to prevent fries from sticking
  • Let the chili rest for 5 minutes off the heat before serving, it makes a huge difference in flavor
