08 - 1/4 teaspoon ground cinnamon
09 - Pinch of salt

→ For Cooking

10 - 1 teaspoon coconut oil or butter

# Directions:

01 - Combine bananas, eggs, milk, and vanilla extract in a blender. Blend until completely smooth and no banana lumps remain.
02 - Add oats, protein powder, baking powder, cinnamon, and salt to the blender. Blend again until the batter is thick, smooth, and well incorporated.
03 - Place a nonstick skillet over medium heat and lightly brush with coconut oil or butter, allowing it to fully melt and coat the surface.
04 - Pour approximately 1/4 cup of batter per pancake onto the heated skillet. Cook for 2 to 3 minutes until bubbles rise to the surface and the edges begin to set.
05 - Carefully flip each pancake and cook for an additional 1 to 2 minutes until golden brown and cooked through the center.
06 - Transfer pancakes to a plate and serve warm with fresh fruit, yogurt, or a drizzle of maple syrup as desired.

# Expert Tips:

01 -
  • The batter comes together in a blender so cleanup is basically one thing and done.
  • They genuinely taste like banana bread but fuel you like a proper meal.
02 -
  • Cook these on medium heat, not high, because protein powder browns much faster than regular batter and you will end up with burnt outsides and raw centers.
  • Let the batter sit for two minutes after blending because the oats absorb liquid and thicken everything up perfectly while you heat the pan.
03 -
  • The riper the banana the sweeter the pancake, so those almost black ones you are about to throw away are actually perfect.
  • Do not overblend the batter after adding the oats because a tiny bit of texture makes the pancakes more interesting and hearty.
