# What You'll Need:

→ Crust

01 - 7 oz graham crackers or digestive biscuits
02 - 2.6 oz unsalted butter, melted

→ Strawberry Layer

03 - 14 oz fresh strawberries, hulled
04 - 2 tbsp granulated sugar
05 - 2 tbsp water
06 - 2 tsp gelatin powder or vegetarian gelatin substitute

→ Cheesecake Filling

07 - 14 oz cream cheese, room temperature
08 - 3.5 oz powdered sugar
09 - 0.85 cup heavy cream
10 - 1 tsp vanilla extract

→ Brain Decoration

11 - 7 oz white chocolate, melted
12 - Pink gel food coloring
13 - Extra strawberry coulis or red berry sauce

# Directions:

01 - Line a brain-shaped silicone mold or medium oval bowl with plastic wrap to prevent sticking.
02 - Crush graham crackers into fine crumbs and mix thoroughly with melted butter. Press mixture firmly into the base of the prepared mold. Refrigerate while preparing filling.
03 - Puree fresh strawberries with granulated sugar until completely smooth. Heat water in a small saucepan, sprinkle gelatin over surface, and let bloom for 5 minutes. Warm gently until dissolved, then stir into strawberry puree. Cool to room temperature.
04 - Beat cream cheese and powdered sugar until smooth and creamy. In a separate bowl, whip heavy cream to soft peaks. Fold whipped cream into cream cheese mixture along with vanilla extract. Gently fold in cooled strawberry gelatin mixture until uniform in color.
05 - Pour strawberry cheesecake filling into mold over prepared crust. Smooth top surface with spatula. Refrigerate for minimum 5 hours or overnight until completely set.
06 - Melt white chocolate and tint with pink food coloring as desired. Transfer to piping bag and pipe squiggly brain patterns onto parchment-lined baking sheet. Chill until firm. Carefully unmold cheesecake and arrange chocolate decorations to resemble brain folds. Drizzle with strawberry coulis for effect.
07 - Slice chilled cheesecake and serve immediately.

# Expert Tips:

01 -
  • No oven required means you can focus your energy on the dramatic presentation instead of babysitting a cheesecake in a water bath
  • The combination of tangy cream cheese and fresh strawberry creates this shockingly bright color that looks straight out of a mad scientists laboratory
02 -
  • The gelatin must cool completely before folding into the cream mixture, otherwise it melts the whipped cream and you lose all that airy texture
  • Let the white chocolate squiggles chill until theyre completely firm before attempting to transfer them, or theyll break into pieces and your brain will look like its been damaged
03 -
  • Run a thin knife around the edge of the mold before unmolding to help release any stuck spots without damaging the smooth surface
  • If you dont have a brain mold, use a regular oval bowl and pipe all the brain folds freehand—it takes longer but gives you more control over the final shape
