07 - 2 tbsp unsalted butter, softened (28 g), for greasing pans

08 - 1 cup canned tomato sauce (240 ml)
09 - 1 tsp dried oregano
10 - ½ tsp dried basil
11 - ½ tsp garlic powder
12 - ½ tsp onion powder
13 - ½ tsp sugar
14 - Salt and black pepper to taste

→ Toppings

15 - 2 cups shredded mozzarella cheese (200 g)
16 - 20-24 slices pepperoni or preferred toppings
17 - 1 tbsp olive oil (15 ml) for brushing crust

# Directions:

01 - Dissolve sugar and yeast in warm water in a small bowl. Let stand until foamy, approximately 5 minutes.
02 - Combine flour and salt in a large bowl. Add the yeast mixture and olive oil. Stir until a rough dough forms.
03 - Turn dough onto a lightly floured surface and knead for 7-8 minutes until smooth and elastic.
04 - Place dough in a lightly oiled bowl, cover, and let rise in a warm area for 1 hour or until doubled in size.
05 - Generously grease two 9-inch round cake pans with softened butter and brush the bottoms lightly with olive oil for enhanced crispiness.
06 - Punch down the risen dough and divide into 2 equal portions. Press each portion into the prepared pans, pushing the dough slightly up the sides to form an edge.
07 - Cover the pans and let the dough relax for 10-15 minutes before topping.
08 - Preheat the oven to 450°F.
09 - Whisk together the tomato sauce, oregano, basil, garlic powder, onion powder, sugar, salt, and pepper in a small bowl until well combined.
10 - Spread half of the sauce evenly over each crust. Sprinkle mozzarella cheese over the sauce and arrange pepperoni or other toppings on top.
11 - Brush the exposed crust edges with olive oil to promote golden browning.
12 - Bake for 20-25 minutes until the crust is golden brown and the cheese is bubbly and lightly browned.
13 - Remove from the oven and let cool for a few minutes before slicing and serving hot.

# Expert Tips:

01 -
  • The crust gets that signature fried crispiness in the oven, no special equipment needed
  • This dough is incredibly forgiving and rises beautifully every single time
02 -
  • Dont skimp on butter when greasing the pans this creates that signature fried bottom crust
  • Let the dough rest in the pan after pressing to prevent it from shrinking back while baking
03 -
  • Pre-shredded cheese has anti-caking agents that prevent smooth melting so grate it fresh when possible
  • If your crust is burning before the cheese melts tent it with foil for the last 5 minutes
